Panna cotta with mint

Panna cotta with mint, topped with berries marinated in elderflower and lime juice. An impressive dessert with delicious fresh flavours.

Ingredients

400 ml whipping cream
5 g Dansukker Vanilla Sugar
95 g Dansukker Jelly Sugar Multi
10 mint leaves

Topping
140 g fresh berries of any kind
Zest and juice of 1 lime 
60 ml concentrated elderflower cordial 
6 g Dansukker Icing Sugar

Instructions

Mix the cream, vanilla sugar, jelly sugar and mint in a saucepan and boil for 30 seconds. Strain to remove the mint leaves. Pour into jars or glasses and put in the fridge to set. 

Wash and pick over the berries and mix with the elderflower cordial, icing sugar and lime zest and juice. Put the mixture on one side until you are ready to serve it with the panna cotta.
