Rhubarb lemonade

This refreshing rhubarb lemonade is perfect for cooling down on hot summer days. Mix it with sparking water for a slightly fizzy taste.

Ingredients

2 kg rhubarb
1 1/2 l water
1 kg Dansukker Granulated Sugar
Juice of 1 lemon

Optional flavouring
approx. 20 g grated fresh ginger

Instructions

Rinse and chop the rhubarb into small pieces. Put the rhubarb and water in a saucepan. Simmer for about 10 minutes until the rhubarb is completely soft.

Strain and reserve the liquid. Clean the saucepan and pour the liquid back into the saucepan. Add the sugar, lemon zest and ginger (optional). Boil the liquid for about 3 minutes. Skim off any scum.

Pour into warm, sterilised bottles. Seal and store in a cool place.
