Skewered chicken fillet with bean salsa

Ingredients

5-600 g chicken fillets

Marinade
2 tbsp oil
2 tbsp Dansukekr Light Syrup
1/2 tbsp Chinese soy sauce
1/2 tsp sambal oelek
1 finely grated garlic clove

Salsa
1 tin red beans
1 tin black beans
200 ml cucumber, deseeded and diced
1-2 tomatoes, deseeded and diced
1 red onion, finely chopped
100 ml flat-leaf parsley, coarsely chopped
2 tbsp Dansukker Preservation Syrup

Instructions

Cut the chicken into pieces and put in a plastic bag. Combine the ingredients for the marinade and pour over the meat. Leave to marinate in the fridge for 1-2 hours, then put the meat on skewers and grill or barbecue.

Rinse the beans thoroughly and combine with the other ingredients. Refrigerate for 2-3 hours to allow the flavours to mature.
