Ingredients
3 eggs
200 g Dansukker Granulated Sugar
120 g plain flour
2 tsp Dansukker Vanilla Sugar
1 1/2 tsp baking powder
30 ml boiling water
Instructions
Beat the eggs and sugar until fluffy. Mix together the flour, vanilla sugar and baking powder and fold into the mixture together with the water.
Bake in the centre of the oven at 250 °C for about 5 minutes. Turn out onto a sheet of greaseproof paper sprinkled with sugar. Spread with jam or mashed berries of your choice. For a special treat, use a mixture of berries and whipped cream. Roll up the cake.
Variations
Coconut Swiss roll: Replace the flour with 3 dl desiccated coconut and 3/4 dl potato starch.
Chocolate Swiss roll: Add 2 tbsp cocoa powder.
Nut Swiss roll: Replace the flour with 100 ground hazelnuts and 2 tbsp potato starch.
